During the summer months when temperatures can get pretty hot and sticky, most of us have no desire to put on the stove or oven and cook a hot meal. Cooking meals that are quick, cool, and of course healthy seems like the obvious way to beat the summer heat.
I particularly like to make yummy salads with ingredients that are in season such as strawberries, blueberries and watermelon. I found this wonderful strawberry salad recipe made with fresh greens, juicy chunks of chicken, and of course the main attraction…strawberries! Check out the recipe below and enjoy this cool and refreshing meal perfect for lunch or dinner!
Salad Ingredients:
- 1 cup sliced strawberries
- 1 handful of diced red onions
- 8 cups of spring mix greens such as spinach, red romaine, arugula, etc.
- 1 cup of chopped rotisserie chicken
- ¼ cup chopped pecans
- ¼ cup feta crumbles
- ½ cup Strawberry Salad Dressing
Strawberry Dressing Ingredients:
For the strawberry salad dressing (makes 1 ¼ cups total)
- 1 ½ cups sliced strawberries
- 2 tablespoons maple syrup
- 2 tablespoons apple cider vinegar
- ¼ cup olive oil
- ¼ teaspoon kosher salt
Salad Instructions:
Slice off the tops of the strawberries, then slice them length-wise. Dice the red onion and be sure to wash the mixed greens. Chop the pecans. I bought a rotisserie chicken at the store and sliced pieces off of that to put in the salad. You can use any chicken you like, grilled, baked, fried, etc.
Dressing Instructions:
In a blender, blend all ingredients until smooth. Blend for a few minutes until fully combined.
Serving:
Place the greens on plates and top with all ingredients. Drizzle with the strawberry vinaigrette salad dressing. Refrigerate the remaining dressing for up to 1 week.
